Wine and cheese pairing
Wine and cheese pairing overturns a received idea, white wine often proving more apt than red, whose tannins clash with fat and salt. The acidity and sometimes sweetness of a white, dry or sweet, better embraces creamy pastes and blues. The terroir rule prevails, a Loire goat cheese calling for a Sancerre, a Comté for a Jura wine, within a single geographic family at the cheese course.
