Wiener Schnitzel
Viennese cutlet emblematic of Austria, whose protected name requires veal. The slice is pounded thin, breaded with flour, egg and crumbs, then fried in plentiful fat until a golden, blistered crust forms and lifts away from the meat. Served with a slice of lemon and potato salad, it features in the classic Austrian cuisine of palace hotels.
