Vacuum pump
The vacuum pump preserves an opened bottle by drawing off the air above the wine, which slows oxidation. A special stopper is fitted onto the neck, then the hand pump extracts the excess air until a partial vacuum forms. Less effective than an inert gas for delicate wines, it nonetheless extends the freshness of an everyday wine by one to three days. It offers a simple, inexpensive solution for keeping wine open and serving it by the glass.
