Underwater dining

A restaurant built below sea level, usually 5 to 10 metres down, with panoramic acrylic windows looking out on marine life. The world's first was Ithaa Undersea Restaurant at Conrad Rangali Island in the Maldives, opened in 2005. Others followed: 5.8 Subsix at Niyama Private Islands (2012), Under in Norway (designed by Snøhetta, 2019, holds a green Michelin star), and Anantara Kihavah Sea Restaurant. A dinner runs EUR 250 to 800 per person. Keeping the windows clean is the operational headache: divers scrub them two or three times a week to remove algae and sediment, which limits how cheaply the format can be reproduced.
