Trolley service refers to the act of presenting dishes on a rolling cart brought to the table, allowing the guest to choose their portion by sight. Roasts, hors d'oeuvres or pastries are arranged there and carved or plated on the spot by the waiter. Inherited from the grand hotels of the early twentieth century, this gesture combines visual choice and personalised service, in a mobile staging characteristic of exceptional tables.
