Throwing (roll)

Throwing, also called rolling, refers to repeatedly passing a cocktail between two vessels, one held aloft and the other held low, through a strainer. The long stream of liquid aerates the drink with fine bubbles while chilling it moderately. Inherited from Spanish bars, the technique serves the Bloody Mary and mixes built on vermouth or sherry, whose aromatics it releases.
