Teppanyaki
Japanese cooking style of grilling meats, seafood and vegetables on a large flat iron plate (teppan) before the diners. The name combines teppan (iron plate) and yaki (grilled). Popularised in the twentieth century, it stages the cook's dexterity in carving and searing in real time. Spectacular and convivial, it shapes the hot-plate Japanese restaurants of grand palace hotels.
