Tableside filleted sole meuniere refers to the lifting of fillets from a whole fish cooked in brown butter, performed at the gueridon with spoon and fork. The server detaches the skin, frees the central bone in a single motion, then reassembles the fillets coated with foaming butter and lemon. This service demonstrates mastery of hot deboning, the sole being presented whole to the guest before the operation to attest its freshness and cooking.
