Synchronised cloche service


Synchronised cloche service refers to the simultaneous lifting of the metal domes covering each plate, performed by as many servers as there are guests on a single signal from the maitre d'hotel. The cloche retains the dish's heat between the kitchen and the table and preserves the surprise of the plating. The coordinated gesture, timed to the second, forms a highlight of high-end service, staging the discipline of the dining room brigade.
