Spätzle


Fresh egg pasta of southern Germany, particularly Swabia, and the neighbouring Alpine regions. A soft batter is scraped or pressed in irregular shreds directly into boiling water, then often tossed in butter. Served alongside meats in sauce or baked with cheese (Kässpätzle), they have a tender, rustic texture and illustrate the Germanic regional cuisine of palace hotels.
