Sotol

Sotol refers to a spirit from northern Mexico distilled not from agave but from Dasylirion, a desert plant known as desert spoon. Its denomination of origin covers the states of Chihuahua, Durango and Coahuila. Because each plant takes more than a decade to mature, its harvest is often wild. Its vegetal, herbaceous and mineral aromatics, shaped strongly by terroir, make it a prized curiosity on contemporary cocktail menus.
