Sokujo
A modern method of preparing the yeast starter, in which lactic acid is added directly to speed up and secure the start of fermentation. Developed in the early twentieth century, it produces clean, pure and fruity sakes and is the most widespread approach today. Its reliability explains the consistency of many sakes served in hospitality.
