Smoking a cocktail


Smoking refers to flavouring a cocktail with smoke, produced by burning wood chips, herbs or spices under a cloche inverted over the glass. The smoke permeates the liquid and headspace, adding woody or toasted notes. Often achieved with a smoking gun, the process accompanies amber drinks based on whisky or mezcal, within a carefully staged bar presentation.
