Simple syrup


Simple syrup is a solution of sugar and water in equal parts, dissolved warm or cold, used as the bar's base liquid sweetener. Its 1:1 volume ratio eases measurement and blends evenly into a shaken or stirred cocktail. Its low density calls for brief refrigerated storage, often one to two weeks, since the modest sugar content only partly slows microbial growth.
