Shrub


A shrub is a sweet-sour syrup of fruit, sugar and vinegar, also called a drinking vinegar. Used as a flavour concentrate, it brings fruit, sharp acidity and aroma in a single ingredient to cocktails and mocktails alike. Its name comes from the Arabic sharab, to drink, and dates to colonial times, when it served to preserve fruit before refrigeration.
