The seafood platter presentation refers to the tiered arrangement on crushed ice of an assortment of crustaceans and shellfish, from oysters to langoustines, from whelk to brown crab. The platter is shown to the guest before service, each species arranged by family and by size, accompanied by condiments such as shallot vinaigrette and lemon.
