Rolling out
Rolling out refers to spreading a dough with a rolling pin to bring it to an even thickness and the shape required. The resulting sheet is called an abaisse. A light dusting of flour keeps the dough from sticking to the surface, while steady, even strokes preserve a uniform thickness. This step prepares the lining of moulds, the cutting of pieces and the lamination of puff pastries.
