Ribbon stage


The ribbon stage refers to the point of aeration at which a yolk and sugar mixture, or a sponge batter, becomes thick enough to fall from the whisk in a continuous fold that rests briefly on the surface. This visual cue signals sufficient aeration and dissolved sugar. Reaching the ribbon governs the lightness of genoise and sponge cakes, where trapped air is the main leavening during baking.
