Rasa (Ayurvedic tastes)


Six tastes recognised by Ayurveda, each acting on the doshas: sweet (madhura), sour (amla), salty (lavana), pungent (katu), bitter (tikta) and astringent (kashaya). A balanced meal brings them all together. Chefs at palace retreats compose their menus by weighting these tastes according to the guest's dosha, to support the digestion and balance sought by the cure.
