Pressed duck carving


Pressed duck carving refers to the spectacular gesture of lifting the breast fillets of a roasted duck at the guéridon, then crushing the carcass in a silver press to extract the blood and juices that form the base of the sauce. An emblematic ritual of the Tour d'Argent in Paris since the nineteenth century, it demands a perfect edge and measured execution before the attentive guest.
