Pomade (enfleurage)

A fragrant fatty mass produced by the enfleurage process, in which the odorous compounds of flowers have been adsorbed by a fat. The pomade, solid and sticky, is then washed with alcohol to extract the enfleurage absolute. A relic of the ancestral techniques of Grasse, it illustrates the patience required to capture the most delicate flowers.
