Poaching


Poaching refers to gently cooking a preparation in a barely simmering liquid held below a rolling boil. In pastry it applies notably to fruit poached in syrup, meringue quenelles cooked in milk for floating island, or pears simmered in spiced wine. The moderate temperature preserves the shape and texture of delicate elements while letting them take on flavour from the surrounding cooking liquid.
