Pisco

Pisco refers to a grape spirit produced in Peru and Chile and the base of the pisco sour. Peruvian pisco, governed by a denomination of origin since 1991, is distilled once in a copper still and may never be aged in wood, which keeps it clear. Quebranta ranks among its emblematic grapes. The Chilean style, by contrast, permits multiple distillation and cask aging.
