Peak maturity
Peak maturity is the stage at which a wine expresses the finest balance between fruit, structure and the tertiary complexity gained through ageing. Before this point the wine may seem closed or overly tannic; afterwards it weakens and loses its vivacity. Peak maturity is not a single moment but a window, sometimes spanning several years for great wines. It shifts with vintage and storage conditions.
