Pairing by complementarity
Pairing by complementarity brings together a dish and a wine whose components answer each other without resembling one another, each supplying what the other lacks. A riesling's bright acidity cuts the fat of charcuterie, while a sweet wine balances the salt of blue cheese. This principle, separate from mere aromatic similarity, shapes a large share of a floor sommelier's recommendations across a menu.
