NH pectin


NH pectin refers to a thermoreversible amidated pectin used in patisserie to make glazes, mirror coatings and fruit inserts. Its distinctive feature is that it melts under heat then sets again on cooling, allowing several reheating cycles. It gels in the presence of sugar and calcium, giving a supple, glossy texture ideal for coating tarts and entremets with precision and a clean, even finish.
