Michelin Green Star


The Michelin Green Star, introduced in 2020, recognizes restaurants demonstrating outstanding commitment to sustainable gastronomy. Criteria include: local and seasonal sourcing, waste reduction, energy and water management, ethical labor, and customer education. The Green Star is awarded independently from traditional stars, a restaurant can have both, just a Green Star, or just regular stars. As of 2024, around 500 restaurants worldwide hold this distinction. What this means for diners: expect transparent menus listing producer names, recycling and composting programs, vegetarian-forward options, and often a dedicated sustainability story shared by the server. Many Green Star restaurants offer farm tours or producer visits. Pricing is comparable to non-Green Star restaurants of the same caliber.
