Mezcal
Mezcal refers to a Mexican spirit distilled from cooked agave hearts, often roasted in earthen pit ovens that lend it a signature smokiness. Its denomination of origin, declared in 1994, spans several states, led by Oaxaca, and permits more than thirty agave species. Its smoky, mineral range makes it a favourite in craft cocktails, from the mezcal negroni to smoky riffs on the margarita.
