Meal pacing


Meal pacing refers to the art of matching the cadence of courses to the guests' own tempo, neither rushed nor languid. Staff read the table's progress, hold back or advance the next dish, and coordinate dining room and kitchen to avoid both lulls and haste. This invisible yet decisive calibration distinguishes a successful gastronomic dinner and leaves the guest in command of the time spent at the table.
