Lining a mould
Lining a mould refers to coating its interior before filling, to ease unmoulding or to build a wall. It can be done with butter and flour, parchment paper, pastry, sponge or biscuit. For layered entremets, lining a ring with a strip of sponge creates the visible outer wall that both contains and dresses the mousse, a common step in modern French plated desserts.
