Kaiseki is Japan's most refined multi-course dining experience, and visiting a kaiseki restaurant is unlike anything you'll find in Western fine dining. Expect a meal lasting two to three hours, served across 8 to 14 small courses presented on artisanal ceramics. Reservations are essential (often weeks ahead), and many traditional venues require you to arrive on time as courses are timed precisely. Dress smart-casual or business attire, no shorts or athletic wear. Most courses include seafood; if you have allergies or dietary restrictions (vegetarian, halal, kosher), inform the restaurant at least 48 hours in advance.
