Jerez (Sherry)

Jerez refers to a wine region in Andalusia, southern Spain, the birthplace of fortified wines known as sherry. The palomino grape dominates, supplemented by pedro ximénez and moscatel for sweeter styles. Ageing relies on the solera and criadera system, a tiered stack of casks blended by age. Styles range from the bone dry fino, marked by the film of flor yeast, to the intensely sweet pedro ximénez, each shaped by that traditional method.
