Host tasting
Host tasting refers to the convention whereby the person who ordered the wine takes the first sip before the rest of the table is served. The sommelier pours a small measure, the host examines the colour, smells then tastes, and signals approval with a nod. Born from the need to confirm the wine had not spoiled, the custom today mainly serves to verify its condition before the full table is poured.
