Hawthorne strainer
The Hawthorne strainer refers to a flat filter ringed by a coiled spring, set over the shaker tin to hold back ice and debris while pouring. The spring hugs the rim and intercepts particles, while a finger adjusts the gate to control flow. A bar standard since the late nineteenth century, it is the most common filtration tool for shaken drinks.
