Guest of honour service
Guest of honour service refers to the priority given to the most esteemed person at a meal, who is served before all other diners. Seated to the host's right, this guest receives the first portion drawn from an untouched platter, a courtesy affording the choicest selection. At palace state dinners, the rule codifies the deference owed to the principal dignitary and sets the rhythm for the entire service sequence.
