Gueridon

The gueridon is a small rolling service table used in the dining room for dish finishing in front of the guest: duck carving, crepes Suzette flambeing, whole fish plating, lamb leg carving, tartare finishing at the table foot. The gueridon is equipped with a heating plate, sometimes a bottom burner, and all finishing utensils. This service technique, demanding in staff and know-how, remains present in three star tables attached to dining room theatre: Le Cinq, Plaza Athenee, Le Bristol, Maison Pic, Le Grand Vefour (Source: MICHELIN Guide France, 2026).
