Grappa

Grappa refers to an Italian pomace brandy distilled from the grape skins, pips and stems left over from winemaking. Protected as a geographical indication reserved for pomace produced and distilled in Italy, it comes in young, crystalline versions or wood-aged ones. A traditional after-dinner digestif, it also inspires contemporary cocktails where its vegetal briskness replaces brandy or perfumes bitter creations.
