Gianduja
Gianduja refers to a smooth paste of chocolate blended with finely ground hazelnuts, created in Turin against the backdrop of a cocoa shortage caused by Napoleon's continental blockade. Presented publicly in 1865 during the Turin carnival, it borrows its name from the Gianduja mask. The traditional Piedmontese recipe combines cocoa, sugar and Tonda Gentile hazelnuts from the Langhe, and appears as small moulded ingots known as giandujotti.
