Fraisier
The fraisier is a French layered cake pairing two syrup-soaked sponge discs, vanilla mousseline cream and a ring of fresh strawberries sliced and placed against the sides to reveal their flesh. Its top is traditionally smoothed with a thin sheet of marzipan, often tinted pale green. Regarded as a spring and summer showpiece, it belongs to the classic repertoire of French pâtisserie windows.
