First nose


First nose refers to the set of aromas perceived above the motionless glass, before any swirling of the wine. It delivers the most volatile compounds and an initial impression of cleanliness, intensity and any faults present. It precedes the second nose, revealed after swirling oxygenates the wine and releases heavier aromas. This distinction structures the olfactory examination and sharpens the reading of aromatic evolution in methodical tasting.
