Financier
The financier is a small rectangular cake made from ground almonds, egg whites, sugar and brown butter, with a moist crumb and a toasted aroma. Derived from the visitandine of the Visitation nuns, it was relaunched around 1890 by the pastry chef Lasne near the Paris stock exchange, its gold-bar shape aimed at the financial clientele of the surrounding district.
