Entremets ring


Entremets ring refers to a bottomless metal ring with tall, smooth sides, used to build and assemble layered cakes, bavarois and mousses. Placed on a tray and often lined with acetate strip, it holds the layers in place while they set in the cold before the ring is lifted away. Its shorter variants, tart rings, are used to bake pastry shells with a reduced side height.
