English service


English service refers to the gesture whereby the waiter presents the garnished platter to the left of the guest, then places the food onto the plate using a service clip, a spoon and fork held in one hand. The diner does not serve themselves. Still practised in palace hotels for shared pieces, this demanding technique requires considerable dexterity and an impeccable bearing from the waiter throughout the meal.
