Digestif trolley

The digestif trolley refers to the end-of-meal service where an attendant presents at the table a selection of tasting spirits, cognacs, armagnacs, aged rums and liqueurs, served on request in the appropriate glass. The guest chooses a bottling, the server comments on vintage and provenance, the service sometimes performed over a warmer for heated spirits. This ritual extends the meal with a closing sequence, showcasing the depth of the house spirits cellar.
