The dessert cart is a rolling presentation trolley on which ten to twenty pastries, tarts, entremets and ice creams prepared by the pastry brigade are displayed, offered to the guest at the end of the meal. The cart is presented by a pastry chef de rang or by the maitre d'hotel, who describes each dessert and serves the chosen portion in front of the guest. The dessert cart tradition persists at Le Cinq Four Seasons George V, Le Bristol Paris, Plaza Athenee Paris and several Italian three star houses. It constitutes an appreciated dining room theatre for guests who enjoy multiple choice at the end of the meal (Source: MICHELIN Guide France, 2026).
