Demerara syrup
Demerara syrup is a syrup made from demerara brown sugar, whose amber, partly refined grains come from sugarcane. It develops notes of molasses, caramel and toffee absent from plain white simple syrup. Favoured in aged rum, bourbon and Old Fashioned cocktails, it lends aromatic depth and a golden hue to mixed drinks.
