Daiquiri

The Daiquiri refers to a Cuban cocktail combining white rum, fresh lime juice and sugar, shaken and served straight up without ice. Its name comes from a beach and mine near Santiago de Cuba, where it was popularised around the turn of the twentieth century. A member of the sour family, it appears in the International Bartenders Association manual as a benchmark balance of acidity, sugar and spirit.
