Creaming


Creaming refers to beating softened butter with sugar until the mixture turns pale, light and airy. The sugar crystals cut into the fat and lodge air bubbles that, during baking, help many cakes rise. This method underpins pound cakes, loaf cakes and shortbread, where it sets both the final volume and the tenderness of the crumb, making it a foundation of Western pastry.
