Clafoutis


The clafoutis is a dessert from the Limousin region made of black cherries arranged in a dish and covered with a flan-like batter of eggs, milk, flour and sugar, then baked. Tradition keeps the cherry stones in, said to perfume the batter as it cooks. A version made with fruit other than cherries is called a flognarde, a distinction still defended by purists in the region of origin.
