Chiboust cream
Chiboust cream refers to a gelatin-set pastry cream folded warm into Italian meringue, giving it an especially light and airy body. Created in nineteenth-century Paris by the pastry chef Chiboust, it is the historic filling of the Saint-Honore cake. Its surface is often caramelized with a blowtorch or hot iron, adding a characteristic toasted note.
